A New Toy and Lotus Chips

First, it was making my own lard. Now, I’ve gone and bought myself a deep fryer! What’s next? I’m pretty sure it’s moon pies and Dr. Pepper.

Anyway, the deep fryer arrived this afternoon and I happen to have a lotus root that I had been hoping to make into chips. A few minutes later, after the gallons of oil I had to use got hot, I had super crispy chips, warm and not even a little greasy. The good news is that once the oil cools down, it can be reused a few times. Chips, fries, sopapillas, tempura… oh, my list of things to make is growing and growing. I really don’t have a recipe today… just had to share a little deep-fry love with you. Yes, I am that much of a food geek.

  2. $50 for a deep fryer? I’d like to hear how that works out for you (or any other readers). Pro and Cons. How long can you use the oil for? When does the used oil flavor start creeping in? Cleaning and disposal? Is 3 liters really as big as it sounds? You could deep fry a cornish hen in there!

  4. You crack me up! I don’t know if you can get these up there, but we fry a lot of inhame, parsnips (batabta baroa), and mandioca in all shapes and sizes here in Brazil. They’re absolutely delicious. Congratulations on the new fryer.

  6. deep fry a candy bar. go on. A local fish and chip shop near my old place used to deep fry almost anything that you would bring in…. Apparently he did a roaring trade deep frying candy bars. Eww.

    My husband recently brought home a small deep-fryer and I have yet to inaugurate it. You’ve inspired me…if not to fry then at least to buy tulips and arrange them in a colorful container.

    Nat – well, it’s not huge but that’s a good thing for me. It still takes a heck of a lot of oil to fill to the min line though. If you need something a bit bigger, there is a 5 litre one that is just a little bit more also by Aroma. As for the rest of your questions, I’ll see how it goes!

  9. Oh I’m so jealous! I am working my way up to a deep-fryer, cause I’m afraid that it will mean the permanent departure of my all ready fluctuating waistline. Are you going to use some of your self-rendered lard for frying? My mouth waters at the thought!

  10. With your new deep-fryer, try to make rutabaga chips. It is delicious. Slice small to medium size rutabagas. It takes about 8 minutes of frying in small batches. I turn then after 5 minutes for best results.

  11. Love the idea to fry lotus roots. Your recipe is innovative which I love better than the traditional recipe (I usually make soup with lotus roots and some pork and peanuts). Thanks for sharing good information! http://newsuperhuman.com
